Ingredients:
- 100g of lentils
- 500ml of vegetable broth
- 1 medium onion, chopped
- 2 cloves of garlic, minced
- 2 medium carrots, diced
- 1 medium celery stalk, diced
- 1 tablespoon of olive oil
- 1 teaspoon of cumin
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1 slice of whole grain bread

Instructions:
- In a large pot, heat the olive oil over medium heat. Add the chopped onion, garlic, carrots, and celery; sauté until the vegetables are softened, about 5 minutes.
- Add the lentils, vegetable broth, cumin, salt, and black pepper to the pot. Bring the mixture to a boil, then reduce the heat and let it simmer, covered, for about 20 minutes or until the lentils are tender.
- Once cooked, use an immersion blender to blend the soup to your desired consistency, or leave it chunky if you prefer.
- Serve the soup hot alongside a slice of whole grain bread.
