Hearty Lentil Soup with Whole Grain Bread

Ingredients:

  • 100g of lentils
  • 500ml of vegetable broth
  • 1 medium onion, chopped
  • 2 cloves of garlic, minced
  • 2 medium carrots, diced
  • 1 medium celery stalk, diced
  • 1 tablespoon of olive oil
  • 1 teaspoon of cumin
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1 slice of whole grain bread

  • Stirring Spoon

  • Bowl

Instructions:

  • In a large pot, heat the olive oil over medium heat. Add the chopped onion, garlic, carrots, and celery; sauté until the vegetables are softened, about 5 minutes.
  • Add the lentils, vegetable broth, cumin, salt, and black pepper to the pot. Bring the mixture to a boil, then reduce the heat and let it simmer, covered, for about 20 minutes or until the lentils are tender.
  • Once cooked, use an immersion blender to blend the soup to your desired consistency, or leave it chunky if you prefer.
  • Serve the soup hot alongside a slice of whole grain bread.
